一、 選料

精選顏色新鮮的豬，牛，羊，雞，鵝，蛙，菜，水果，等腌泡烤制。

二、配方

1、肉串類：

以5公斤鮮肉計應加入香料的份量。

配方1：鮮疆羊肉串料（武漢產）1.5包，味精70—90克，精鹽36克，姜、香蔥（剁細）各40克，白糖7克，肉鬆粉25克，紅薯澱粉250克。

將上述原料放在切好的肉條中拌和均勻，腌泡10分鍾即可用竹簽穿串待烤。

配方2：十三香100克，味精70—90克，精鹽36克，特鮮1號1包，生薑香蔥各40克，白糖7克，紅暑澱粉250克。

將以上各種原料放入切好的鮮肉條中拌勻，腌泡到15分鍾既可串成串待烤。

注意：以上兩法肉品干濕度為肉串能吸附香料不落，不流水為宜。有水流出就稀了，不易保持風味，幹了耗油，應掌握在手握一把肉覺得濕潤但不出水為佳。

這兩種配方任你選用，調串出食品幾十上千個。

2、雞翅、雞尖、雞腿、鴨翅等所有雞、鵝、山雞、鵪鶉、乳鴿等食品。其配方如下：

5公斤食品需要加入：麻辣臭乾料2包，精鹽60克，味精90克，生薑、香蔥(剁細)名30克，白糖7克，紅署澱粉150克。

將上述原料和5公斤食品充分攔勻，腌泡20分鍾穿成串。如果拌合時乾燥、料沾不上，應適當加水，讓其調料完全沾在肉食上面，不宜過稀。這些都是生料烤制。

3、雞、鴨、鵝爪類多個品種，配方為：

5公斤食品洗凈後放入鍋中，加水淹沒為止，放入精鹽110克，生薑(拍破)80克，味精100克，香蔥鮮頭50克、花椒10克，用中火煮熟，待爪泡大伸直，用簽一穿即破時可撈出冷後，每串穿2個待烤。

4、魚類：各種類型的魚穿成半邊魚、魚串、全魚、魚尾等多個品種的配方為：

5公斤鮮魚所加入的原料：十三香100克，精鹽60克，白糖90克，味精80克，生薑、香蔥（剁細）各40克，紅薯粉150克。

將上述原料和鮮魚充分拌勻，干濕掌握與肉串相同，腌泡30分鍾後穿串待烤。

特別提醒：為了你能正確掌握各類食品的腌泡方法，烤出特別風味來，我部特將「香辛窖水」浸泡法改為香料直接腌泡法，目的是擔心你用「香辛窖水」時濃度掌握不好而 口味。

某些復合成品香料已包含有些香料中葯材。

5、排骨類：所有動物排骨都按以下配方調制：5公斤鮮排骨，加入十三香110克，五香粉20克，精鹽36克，松肉粉30粉、白糖8克、味精80克、特鮮1號1包，生薑、香蔥（剁細）各40克，紅薯澱粉150克。

上述原料和排骨拌均勻後腌脆20分鍾穿串待烤。

6、蔬菜類：南瓜、茄子、 片、土豆、玉米棒、白菜等多個品種配方為：

紅薯澱粉500克、精鹽1500克、味精（細粉）400克，特鮮1號2包、十三香420克、白糖30克、芝麻150克。紫草粉（食用香料）50克，將上述混合均勻即成香精粉裝袋備用。

烤時先將穿好的蔬菜串平放在爐上，再用湯匙裝上香粉倒在蔬菜塊上，每串放1克左右，每邊放0.5克，在用毛刷沾油刷濕均勻烤制。放入香精的多少你可先烤3-5串自己品嘗，根據當地人口味再增減香粉量。

三、穿串

先將應烤的肉、蔬菜洗凈，然後把肉切成2-4厘米長、寬0.8厘米的方形肉條（也可自定）：排骨根據你地市價自定切塊定價；魚打鱗後破開清除肚腸洗凈切成長12厘米的塊或長不限的全魚：藕以穿生藕。然後竹簽穿成串：肉穿成丁字形：魚、茄子等大串每串用兩根簽子。

四、烤制

1、生火：先將烤爐清理干凈放好，加入木炭（粟炭）點燃，放炭充分燃燒，再把炭火用火鉗刨開鋪成厚度為1.5-2厘米高的火層。

2、烤制：將食品串放在爐面上，凡是肉、排骨類的直接刷油（兩面都刷）烤制，再翻來覆去地烤。串子看上去油泡翻滾，顏色變白變黃表示成熟，雞爪等應烤到有炸響聲，雞翅烤成焦黃泡大，雞腿邊烤邊用小刀破口刷油烤至焦黃，裡面沒有血水溢出表示成熟。烤制時間長短應根據火候大小，、串子品種而定，但千萬不能烤焦。邊烤邊刷油，待食物烤到九成熟時及時撒上辣粉、孜然角或粉。刷上油，稍烤一下既可起爐出售，不吃辣的不加辣粉。
