美國和中國的飲食差別。

1、飲食觀念的差異。

中國人吃的是口味。「味」,是中國飲食的魅力所在。中國人飲食的目的,除了果腹充飢,同時還滿足對美味的渴望,帶來身心的愉悅。

西方是一種理性的,講求科學的飲食觀念。西方飲食用絕對的理性來規范人的行為,用「科學」、「營養」來排斥能給人帶來愉悅享受的美食,雖能滿足生理需要,但不能使人從中獲得精神上的愉悅,可謂美中不足。西方人注重營養,以至他們大多數是高大強壯的。

2、烹飪方法的差異。

西方的烹飪方法不像中國那樣復雜多變,西餐的裝盤立體感強,可食性強,所有進盤的食品絕大多數都能食用,點綴品就是主菜的配菜。西餐的原料多選擇新鮮、無污染、天然、操作工藝自然的,盡量發揮其本味,干貨原料用的不是太多,牛奶在西餐中是不可缺少的原料。

3、用餐禮儀的差異。

在禮儀方面,中西之間更顯不同。在中國古代的用餐過程中,就有一套繁文縟節。《禮記·曲記》載:「共食不飽,共飯不擇手,毋放飯,毋固獲;毋揚飯,卒食,客自前跪,撒飯齊以授相者,主人辭於客,然後客坐。」

這段話大意主要是:大家共同吃飯時,不可以只顧自己吃飯。如果和別人一起吃飯,必須檢查手的清潔。不要把多餘的飯放回鍋里,不要專占著食物,也不要簸揚著熱飯。

吃完飯後,客人應該起身向前收拾桌上的盤碟交給主人,主人跟著起身請客人不要勞動,然後客人再坐下。這些禮儀有的在現代也是必要的禮貌。

在西方宴席上,主人一般只給客人夾一次菜,其餘由客人自主食用。若客人不要,就不再勸人家吃,也不按中國人的習慣頻頻給客人勸酒、夾菜。吃東西時不發出響聲,但客人要注意贊賞主人准備的飯菜。若與人談話,只能與鄰座交談,不要與距離遠的人交談。
