不過,下酒菜與下飯菜不一樣。南京大學文學院的余斌教授愛酒,著有《喝酒的故事》,他認為,下酒菜要「經吃」,也就是耐咀嚼,而且喝酒緊拉慢唱,總得有半個鍾頭的工夫,適合以冷盤打底。

作為資深吃貨,余斌琢磨出畜類邊邊角角、筋頭巴腦的所在,與循序漸進式的飲酒,最能相契。鴨舌鴨脖、鴨肫鴨心,均可入列,而南京人的心頭好「鴨四件」,就是一道絕妙的下酒菜。

所謂「鴨四件」,就是鴨子的兩只翅膀兩只腳,合起來稱為「四件」。其實,「鴨四件」有多種說法。

《隨園食單補證》中說:「今人以雞鵝鴨之肫、肝、心、腸謂之事件,或曰四件。」《金陵物產風土志》中則說:「市肆諸鴨,除水晶鴨外,皆截其翼、足,探其肫、肝,零售之,名為四件。」現在也有飯店是拿鴨翅、鴨肝、鴨心、鴨掌作為鴨四件的,不管怎麼說,精華是鴨翅鴨掌。這些是運動部位的「活肉」,啃起來美滋美味,有嚼頭。據說,宋美齡在南京時就特別愛吃「鴨四件」。

鴨翅看上去比較「橫」,拐子杵在那裡大鉗子似的。其實卻沒多少肉,比雞翅不如,肉多處也不過是骨頭間的絲絲縷縷,加上關節處的脆骨,吃的過程以啃為主,輔之於嚼,幾乎沒有吃肉的感覺,只能微微嘗些味道。吃時稍有難度,需要動手,令喝酒添幾分從容,慢節奏里,酒與下酒物,才能「津津有味」。畢竟「又不是圖它的肉」,要的是一個吃趣兒,只為解饞,而非裹腹。倒上杯小酒兒,啃上個鴨翅,和三五好友說說笑笑,時間就在悠閑中打發過去,這就是南京市民的煙火氣。南京的「鴨四件」,有鹵制的,但以鹽水的居多。畢竟,鹽水鴨是南京的特產。不過需要注意的是,南京人買「鴨四件」回家下酒,常常是從整隻鹽水鴨上現斬下來的,此外還比較常見的是和黃豆一起紅燒,帶些甜味,也是風味獨特。
