2,素料加工:
沙葛1個(成人拳頭大小),去皮,切絲,然後下5成熱的油鍋中煸炒,下1大湯匙蚝油,炒均勻,約7成熟就可上碟,瀝去汁水;
芽菜(綠豆芽)摘洗干凈,燒一鍋開水,水中加料酒幾滴、鹽1-1.5茶匙,煮沸後放綠豆芽,焯至豆芽剛剛變色,立即倒入漏勺瀝干水分,上碟晾涼,千萬不要煮太久!
韭黃或韭菜摘洗干凈,切段,然後用沸水沖一下,上碟
老爸豆腐乾切成絲
包春卷:
我媽媽把每樣餡料各取一些,放在攤開的春卷皮上,大約是四方形春卷皮的其中一個角的附近,然後把那個角疊到餡料上,再向前卷卷,把兩邊的另外兩個角疊向中間,最把春卷向前卷一下,然後用濕手指在最後一個角上沾沾,把這個角粘上,就包好了,就是象包包袱那樣包。另外春卷皮包裝袋背後可能有包春卷的說明
煎春卷:
平底鍋中下油,燒熱,下春卷,中火,煎至兩面金黃,注意火候,要不時翻翻,不要煎糊了,而且翻過來後要下油,春卷皮要吸足油分,才會煎得又香又酥又脆!^_^
兩面煎至金黃後上碟,用廚房吸油紙稍吸油分(當然也可以炸,但是煎沒有炸那麼油膩,而且同樣香脆)

要訣:
1,餡料總結為:「有葷有素,有味無汁」的八字訣。炒素菜料的時候,不下鹽,這樣菜就不容易出水,而且改下蚝油,既能帶出鹹味,又鮮美可口。如果菜料出水,弄濕春卷皮,春卷就不容易煎脆了。
2,炒葷料要熟,但是炒素料不要過熟,因為煎的過程中的熱量會最終令素菜料全熟而且將素菜的汁水留在餡料中,這樣吃起來才外脆里鮮而且咬起來有少許鮮美的菜汁!
3,打雞蛋時下些生粉,這樣攤出來的雞蛋皮會更均勻
4,攪魚漿的時候千萬不要下油同攪,否則材料不容易粘連
5,煎春卷的過程中要注意下油和火候,如果油分不夠,春卷容易局部黑糊,影響味道。
6,如果包的時候包破了,有口子,可以撕一小片春卷皮,沾點水帖在破了的口子上,煎的時候先煎這個破了口子的地方,春卷皮子一加熱就粘緊了
