步驟
1.草魚去鱗去鰓處理干凈,切成大塊;西紅柿切塊;土豆去皮切片。
2.大火加熱炒鍋中的油,爆香老薑片和朝天椒(或干辣椒),放黃豆芽和土豆片,調入鹽煸炒數下。
3.加入高湯(或水)和自製酸湯,煮沸後將西紅柿塊和魚塊放入湯汁中。
4.所有材料融合在一起,清新酸香的味道出來後,放油豆腐(或腐竹)再煮幾分鍾。
5.離火前撒上蒜茸和香菜即可。
做法三
食材
草魚、香菇、青筍、豆腐、姜、大蔥、蒜、辣椒、西紅柿、紅酸湯、糖、鹽、胡椒粉、鹽、糊辣椒面等。
步驟
1.魚去內臟清洗干凈,均勻分段。
2.姜切片,蔥切大段,蒜剝皮,辣椒切片,西紅柿切小塊。鍋中倒入油,六成熱時加入蔥姜蒜,煸炒出香味,然後加入西紅柿煸炒出水分。
3.在鍋中加入酸湯、清水,放油、糖、魚塊,燒開後將浮沫撇去,加入鹽、味精、胡椒粉,煮5分鍾左右。鍋中最後加入香菇和青筍再小火煮5分鍾。
4.將薑末、蒜末、香菜末、香蔥末放入碗中,加糊辣椒面和鹽,舀一勺煮好的酸湯汁水沖入碗中,攪拌均勻即為蘸料。隨魚上桌蘸食。
5.撈出大部分的魚吃完後,可再加入豆腐煮,或再涮制其他青菜。
做法四
食材
魚、番茄、青辣椒、紅辣椒、青蒜、檸檬香茅、雞湯、料酒、鹽、胡椒粉。
步驟
1.將魚切成段,然後用廚房用紙把魚表面的水吸干。
2.腌制魚肉:在魚片中放入鹽、胡椒粉、料酒、蛋清、澱粉、油,腌制十分鍾。
3.在腌制魚肉的時間准備蔬菜:把番茄頂部劃一個十字,鍋中燒開水,把番茄放入水中一燙,再放入涼水中過一遍,番茄的皮可以很輕松地去掉,然後切成小粒。
4.把青辣椒、紅辣椒、青蒜切小段,把檸檬一切為二,把香茅切薄片。
5.鍋中加底油煸炒番茄,炒出湯汁以後放入辣椒。
6.鍋中倒入雞湯(在家做飯時倒水也可以)。
7.水開後加入鹽、糖、胡椒粉。
8.將魚片一片一片地放入鍋里。
9.把檸檬中的檸檬汁擠到鍋里,再放入青蒜、魔芋絲、九層塔。
