一、 选料

精选颜色新鲜的猪，牛，羊，鸡，鹅，蛙，菜，水果，等腌泡烤制。

二、配方

1、肉串类：

以5公斤鲜肉计应加入香料的份量。

配方1：鲜疆羊肉串料（武汉产）1.5包，味精70—90克，精盐36克，姜、香葱（剁细）各40克，白糖7克，肉松粉25克，红薯淀粉250克。

将上述原料放在切好的肉条中拌和均匀，腌泡10分钟即可用竹签穿串待烤。

配方2：十三香100克，味精70—90克，精盐36克，特鲜1号1包，生姜香葱各40克，白糖7克，红暑淀粉250克。

将以上各种原料放入切好的鲜肉条中拌匀，腌泡到15分钟既可串成串待烤。

注意：以上两法肉品干湿度为肉串能吸附香料不落，不流水为宜。有水流出就稀了，不易保持风味，干了耗油，应掌握在手握一把肉觉得湿润但不出水为佳。

这两种配方任你选用，调串出食品几十上千个。

2、鸡翅、鸡尖、鸡腿、鸭翅等所有鸡、鹅、山鸡、鹌鹑、乳鸽等食品。其配方如下：

4、鱼类：各种类型的鱼穿成半边鱼、鱼串、全鱼、鱼尾等多个品种的配方为：

5公斤鲜鱼所加入的原料：十三香100克，精盐60克，白糖90克，味精80克，生姜、香葱（剁细）各40克，红薯粉150克。

将上述原料和鲜鱼充分拌匀，干湿掌握与肉串相同，腌泡30分钟后穿串待烤。

特别提醒：为了你能正确掌握各类食品的腌泡方法，烤出特别风味来，我部特将“香辛窖水”浸泡法改为香料直接腌泡法，目的是担心你用“香辛窖水”时浓度掌握不好而 口味。

5、排骨类：所有动物排骨都按以下配方调制：5公斤鲜排骨，加入十三香110克，五香粉20克，精盐36克，松肉粉30粉、白糖8克、味精80克、特鲜1号1包，生姜、香葱（剁细）各40克，红薯淀粉150克。

6、蔬菜类：南瓜、茄子、 片、土豆、玉米棒、白菜等多个品种配方为：

红薯淀粉500克、精盐1500克、味精（细粉）400克，特鲜1号2包、十三香420克、白糖30克、芝麻150克。紫草粉（食用香料）50克，将上述混合均匀即成香精粉装袋备用。

烤时先将穿好的蔬菜串平放在炉上，再用汤匙装上香粉倒在蔬菜块上，每串放1克左右，每边放0.5克，在用毛刷沾油刷湿均匀烤制。放入香精的多少你可先烤3-5串自己品尝，根据当地人口味再增减香粉量。

三、穿串

先将应烤的肉、蔬菜洗净，然后把肉切成2-4厘米长、宽0.8厘米的方形肉条（也可自定）：排骨根据你地市价自定切块定价；鱼打鳞后破开清除肚肠洗净切成长12厘米的块或长不限的全鱼：藕以穿生藕。然后竹签穿成串：肉穿成丁字形：鱼、茄子等大串每串用两根签子。

四、烤制

1、生火：先将烤炉清理干净放好，加入木炭（粟炭）点燃，放炭充分燃烧，再把炭火用火钳刨开铺成厚度为1.5-2厘米高的火层。
