所谓“鸭四件”,就是鸭子的两只翅膀两只脚,合起来称为“四件”。其实,“鸭四件”有多种说法。
《随园食单补证》中说:“今人以鸡鹅鸭之肫、肝、心、肠谓之事件,或曰四件。”《金陵物产风土志》中则说:“市肆诸鸭,除水晶鸭外,皆截其翼、足,探其肫、肝,零售之,名为四件。”现在也有饭店是拿鸭翅、鸭肝、鸭心、鸭掌作为鸭四件的,不管怎么说,精华是鸭翅鸭掌。这些是运动部位的“活肉”,啃起来美滋美味,有嚼头。据说,宋美龄在南京时就特别爱吃“鸭四件”。
鸭翅看上去比较“横”,拐子杵在那里大钳子似的。其实却没多少肉,比鸡翅不如,肉多处也不过是骨头间的丝丝缕缕,加上关节处的脆骨,吃的过程以啃为主,辅之于嚼,几乎没有吃肉的感觉,只能微微尝些味道。吃时稍有难度,需要动手,令喝酒添几分从容,慢节奏里,酒与下酒物,才能“津津有味”。毕竟“又不是图它的肉”,要的是一个吃趣儿,只为解馋,而非裹腹。倒上杯小酒儿,啃上个鸭翅,和三五好友说说笑笑,时间就在悠闲中打发过去,这就是南京市民的烟火气。南京的“鸭四件”,有卤制的,但以盐水的居多。毕竟,盐水鸭是南京的特产。不过需要注意的是,南京人买“鸭四件”回家下酒,常常是从整只盐水鸭上现斩下来的,此外还比较常见的是和黄豆一起红烧,带些甜味,也是风味独特。
