●从前菜到咖啡,这是最传统的套餐形式:前菜→汤→鱼类料理→肉类料理1(主菜)→ 水果冰点→肉类料理2→沙拉→甜点→水果 咖啡。在前菜之前可饮用少许开胃酒,也可以 选用很少量的小点心。
鸟类:先把翅膀和腿切下,然后借助刀和叉来吃身体部分。你可以把翅膀和腿用手拿着吃, 但不能拿身体部分。 鸡肉:先吃鸡的一半。把鸡腿和鸡翅用刀叉从连结处分开。然后用叉稳住鸡腿(鸡脯或鸡翅 ),用刀把肉切成适当大小的片。每次只切两三片。如果场合很正式,不能适合刀叉取用的 ,干脆别动。如果是在非正式场合,你可以用手拿取小块骨头,但中能使用一只手。
肉排:用叉子或尖刀插入牛肉,猪肉或羊肉排的中心。如果排骨上有纸袖,你可用手抓住, 来切骨头上的肉,而这样就不会使手油腻。在正式场合或者在饭店就餐时即使包有纸袖也不 能用手拿着骨头啃着吃。这些多余的东西基本上是用来作装饰的,而没有让你暴吃一顿的意 思。另外,在非正式场合,只有骨头上没有汤时才可以拿起来啃着吃。
鱼 先用刀叉把鱼头和鱼尾割下,放在盘边。然后用刀尖顺着鱼骨把鱼从头到尾劈开。这时 你有三种选择: 1 、将鱼骨滑出 2、将鱼平着分开,取出鱼骨 3、揭去上面一片,吃完后再去骨 如果嘴里吃进了小骨头,用姆指和食指捏出,爱吃鱼的人会连小鱼头吃掉,而吃到鱼的脸颊 是很幸运的事。
如何摆置刀与叉
用餐中为八字形,如果在用餐中途暂时休息片刻,可将刀叉分话盘中,刀头与叉尖相对 成”一”字形或”八”字形,刀叉朝向自己,表示还是继续吃。如是是谈话,可以拿着刀叉 ,无须放下,但若需是作手势时,就应放下刀叉,千万不可手执刀叉在空中挥舞摇晃。应当 注意,不管任何时候,都不可将刀叉的一端放在盘上,另一端放在桌上。 刀与叉除了将料 理切开送入口中之外,还有另一项非常重要的功用。刀叉的摆置方式传达出“用餐中”或是 “结束用餐”之讯息。 而服务生是利用这种方式,判断客人的用餐情形,以及是否收拾餐 具准备接下来的服务等等,所以希望积闰能够记住正的的餐具摆置方式。特别要注意的是刀 刃侧必须面向自己。用餐结束的摆置方式有两种:用餐结束后中,可将叉子的下面向上,刀 子的 度胁?向内与叉子并拢,平行放置于餐盘上。接下来的摆置方式又分为英国式与法国 式,不论哪种方式都可以,但最常用的是法国式。尽量将柄放入餐盘内,这样可以避免因碰 触而掉落,服务生也较容易收拾。 出席结婚餐宴时,不论怎么将餐具摆成“用餐中”的位 置,只要主要宾客用餐结束,就应立即把所有的料理收起。所以宴会时,切记皆以主要宾客 为中心进行。在宴会中,每吃一道菜用一副刀叉,对摆在面前的刀叉,是从外侧依次向内取 用,因为刀叉摆放的顺序正是每道菜上桌的顺序。刀叉用完了,上菜也结束了。中途需是谈 话或休息时,应该将刀叉呈八字形平架在盘子两边。反之,刀叉柄朝向自己并列放在盘子里 ,则表示这一道菜已经用好了,服务员就会把盘子撤去。前菜或是甜点等,如果是可以直接 用叉子叉起食用的料理,没有必要刻意地一定使用刀子。在家庭内的餐会或是与朋友之间的 轻松聚餐,像沙拉或是蛋包饭之类较软的料理也可以只使用叉子的进餐。但是在正式的宴席 上使用刀叉,能给人较为优雅利落的感觉。另外,在欧洲等地,常可看见有人右手拿叉子, 左手则拿着面包用餐。不管吃得怎么利落优雅,这样用餐也只能在家庭或大众化的店中,在 高级餐厅内是绝对行不通的。 没用过的刀子,就这样放在桌上即可,服务生会自动将它收 走。 虽说将刀与叉放在餐盘上并拢是代表结束用餐的讯息,但是没有必要把干净刀子特地 放入弄脏的餐盘内。 没有用过的餐具保持原状放在原处即可,硬要追求形式的规则反而显 得奇怪。随机应变,依当时的状况处理事物才是最正确的。 即使掉了也不算出丑,但是自 己弯下腰去捡就满丢脸的。所以东西掉了的时候最好请服务生过来替你捡起。服务生随时都 在注意客人的情况,所以会很快地再拿新的餐具过来,万一服务生没有注意到,可以面向服 务生稍微地将手抬高一下,尽量不要引起其他人侧目注视。 服务生的工作是为了使客人能 更愉快地用餐,所以尽可向他们提出要求。

说个实话,西餐这个东西未必合我们每个人的口味。我老婆有一次私下就跟我发表过感慨,说吃西餐啊,吃的是形式,内容上不足挂齿。她跟我她说我跟你吃西餐,我从来没吃饱过。点着红红的蜡烛,铺着白白的餐巾,拿着银质的刀叉,吃的东西半生不熟,没吃饱过。即便这样,她发表一个诚实的感受,可是有的时候你到人家那儿吃饭,比如你跟外商在一块儿谈事,他请你吃西餐,你是没有办法回避。你到国外去有些地方你找中餐,他做得也不地道,往往还很贵,这样的话就有西餐礼仪问题了。
首先我要来简单说说什么是西餐。严格地讲,西餐这个提法是不太严谨的,你很难把西餐是什么说清楚。我们只能这样讲,所谓西餐是指的对西方国家餐饮的一种统称,其基本特点是要用刀叉进食。用餐方式实际上是有三大类别,第一大类别我们称为东方型,就是拿筷子。中国人,日本人,韩国人,老挝人他用筷子吃东西,当然有的筷子和筷子还有不同。比如你要去过韩国你会发现,韩国的筷子一般是金属的,而且比较扁,带尖,因为他吃烧烤,那个东西可以叉食,半个叉子。我们这儿是方方的圆圆的,我是讲十里不同风,百里不同俗,我们东方形态一般就是用筷子吃东西。另外一个类型,我们可以称为印度、阿拉伯人的类型。他们那个特点是什么呢?是不用餐具,用手直接取食,一般的特点就是用右手把要进嘴的东西把它撮放到一块儿,然后放到嘴里去,必要的话有洗手钵,把手指头在里面涮洗。像这种情况我们也见得多了,也不会少见多怪,看不惯了,但是若干年以前不行。我记得若干若干年之前刚改革开放,那时候少见它就多怪,我跟几个同事吃印度菜去了,好嘛,一上桌,人家就把洗手钵,每个人前面一小碟子,浅浅的,银质的那个盘子,有一半是水,很清澈的,上面放着柠檬的切片和玫瑰的花瓣,很好看,高档菜馆。我们一个老兄就发言了,老外还是比较会吃,没吃就给喝高汤,咋整,没办法,我们只能陪着他整,一人喝了一碗洗手水。因为他是主宾,你还不能让主宾丢人你能说他吗,你说你傻冒,你不能说,你只能陪着他,舍命陪君子,我记忆犹新,这20多年过去了,我还忘不了这事,跟人家喝了一碗洗手水,好在还没洗,它是这样的特点。另外就是西方国家的,它的特点运用刀叉去取食。但是严格地讲,英国菜、俄罗斯菜、法国菜,意大利菜,西班牙菜它还是有很大区别的,不过在中国人的眼里差不多,所以我们称为西餐。

那么在西餐的餐桌礼仪中还有一点是比较重要的,就是餐桌上的交际是有讲究的。比如你跟谁说话,你说什么话,你先跟谁说话,后跟谁说话都有讲究。比如你要去过正规的西餐厅你会发现正规的西餐厅跟中餐厅有一点截然的不同,什么地方不同呢?你见不到现场服务的女服务生,女服务生顶多是在那买单的,结帐的,领位的,但是端盘子端菜的他都是男人。因为西餐是讲女士优先,男人干活,女人管吃,所以你要去参加一个家宴的西餐宴会的话,你要是一个有良好教养的男士,你首先应该致意的就是女主人,夫人好。如果这个女主人亲自下手做羹汤,为你做饭的话,你还得赞美一下这个菜烧得很好吃。不管真好吃,假好吃,都得说好吃,这是对女主人的尊重也是对她全家的尊重,我刚才讲这些问题你要不注意它就出麻烦了,我给你讲两个笑话。
