芽菜(绿豆芽)摘洗干净,烧一锅开水,水中加料酒几滴、盐1-1.5茶匙,煮沸后放绿豆芽,焯至豆芽刚刚变色,立即倒入漏勺沥干水分,上碟晾凉,千万不要煮太久!

2,炒荤料要熟,但是炒素料不要过熟,因为煎的过程中的热量会最终令素菜料全熟而且将素菜的汁水留在馅料中,这样吃起来才外脆里鲜而且咬起来有少许鲜美的菜汁!
3,打鸡蛋时下些生粉,这样摊出来的鸡蛋皮会更均匀
4,搅鱼浆的时候千万不要下油同搅,否则材料不容易粘连
5,煎春卷的过程中要注意下油和火候,如果油分不够,春卷容易局部黑糊,影响味道。
6,如果包的时候包破了,有口子,可以撕一小片春卷皮,沾点水帖在破了的口子上,煎的时候先煎这个破了口子的地方,春卷皮子一加热就粘紧了
