至少从5000年前开始,人们就热衷于吃大蒜。它的辛辣,微辣的味道注入咖喱,糕点,炒薯条,甚至偶尔的甜点。但这些美味的菜肴可能伴随着余震:有时令人讨厌的蒜味,在余震后持续数小时。那么,为什么人们喜欢大蒜的味道,却讨厌由此产生的大蒜味呢?”俄亥俄州立大学食品科学与技术系主任、教授谢丽尔·巴林格(Sheryl Barringer)说,

这种效应可以持续24小时,巴林格说。但她和她的同事发现,有些食物可以帮助你。巴林格和研究生丽塔·米隆多在2016年发表在《食品科学杂志》上的一篇论文中报告说,吃苹果、生菜或薄荷显著降低了人呼吸出的大蒜副产品的浓度。这些食物之所以起作用,是因为它们含有酚类化合物,酚类化合物与硫化物结合,使硫化物体积过大,无法通过空气传播。

当然还有另一种选择:简单地学会拥抱这种独特的现象。巴林格说,大蒜气味本身并不难闻,我们只是不习惯闻到食物从嘴里出来,而不是进去。

“这不是一种难闻的气味,只是它断章取义。”。试着把它看作是你曾经享受过的美味佳肴的一个小时间胶囊。
