3、將水油皮面和油酥面分別分成大小均等的6份,並靜置鬆弛15分鍾左右。
4、取一個小的水油皮面團,在手掌上壓扁。
把小油酥面團放在壓扁的水油皮面團上,用水油皮面團把油酥面團包起來,包好的面團收口朝上放在案板上,並用手掌壓扁。
5、用擀麵杖把面團擀成長橢圓形,擀好的面片,從外往內捲起來,把卷好的面團,再次用擀麵杖擀成長橢圓形面片。反復兩次.
6、將鮮肉餡放在面片中央,並包起來。將包好的面團收口朝下放在烤盤上。用手掌握住面團,輕輕壓扁。壓的時候千萬不要用力,否則底部的收口可能會被壓破。
7、依次做好所有的月餅面團以後,在面團表面刷一層蛋黃。
8、把烤盤放進預熱好的烤箱,200度,中層,烤20-25分鍾,表面金黃色即可出爐。
小訣竅:
1、用豬油是最好的,沒有用黃油或植物油代替
2、收口的時候,收口處一定不能沾上餡料,否則收口捏不緊,烤的時候必然會破的。
3、除了使用鮮肉餡,也可以用豆沙餡,棗泥餡,蓮蓉餡等來製作蘇式月餅。製作方法是完全一樣的。

Microwave two tablespoons of glutinous rice powder with strong heat for about 1 minute until cooked.Dust the mooncake mould (50-63 grams) and tap to remove excess rice flour. Take one portion from each 3 colours of dough and combine them into a round. Flatten out the dough and center the filling. Seal and shape into a ball. Lightly coat the surface with prepared cooked glutinous rice flour. Press each into mooncake mould and then push lightly out on a serving plate. Cover tightly with plastic film and chill for 1-2 hours.
