●從前菜到咖啡,這是最傳統的套餐形式:前菜→湯→魚類料理→肉類料理1(主菜)→ 水果冰點→肉類料理2→沙拉→甜點→水果 咖啡。在前菜之前可飲用少許開胃酒,也可以 選用很少量的小點心。
鳥類:先把翅膀和腿切下,然後藉助刀和叉來吃身體部分。你可以把翅膀和腿用手拿著吃, 但不能拿身體部分。 雞肉:先吃雞的一半。把雞腿和雞翅用刀叉從連結處分開。然後用叉穩住雞腿(雞脯或雞翅 ),用刀把肉切成適當大小的片。每次只切兩三片。如果場合很正式,不能適合刀叉取用的 ,乾脆別動。如果是在非正式場合,你可以用手拿取小塊骨頭,但中能使用一隻手。
肉排:用叉子或尖刀插入牛肉,豬肉或羊肉排的中心。如果排骨上有紙袖,你可用手抓住, 來切骨頭上的肉,而這樣就不會使手油膩。在正式場合或者在飯店就餐時即使包有紙袖也不 能用手拿著骨頭啃著吃。這些多餘的東西基本上是用來作裝飾的,而沒有讓你暴吃一頓的意 思。另外,在非正式場合,只有骨頭上沒有湯時才可以拿起來啃著吃。
魚 先用刀叉把魚頭和魚尾割下,放在盤邊。然後用刀尖順著魚骨把魚從頭到尾劈開。這時 你有三種選擇: 1 、將魚骨滑出 2、將魚平著分開,取出魚骨 3、揭去上面一片,吃完後再去骨 如果嘴裡吃進了小骨頭,用姆指和食指捏出,愛吃魚的人會連小魚頭吃掉,而吃到魚的臉頰 是很幸運的事。
如何擺置刀與叉
用餐中為八字形,如果在用餐中途暫時休息片刻,可將刀叉分話盤中,刀頭與叉尖相對 成」一」字形或」八」字形,刀叉朝向自己,表示還是繼續吃。如是是談話,可以拿著刀叉 ,無須放下,但若需是作手勢時,就應放下刀叉,千萬不可手執刀叉在空中揮舞搖晃。應當 注意,不管任何時候,都不可將刀叉的一端放在盤上,另一端放在桌上。 刀與叉除了將料 理切開送入口中之外,還有另一項非常重要的功用。刀叉的擺置方式傳達出「用餐中」或是 「結束用餐」之訊息。 而服務生是利用這種方式,判斷客人的用餐情形,以及是否收拾餐 具准備接下來的服務等等,所以希望積閏能夠記住正的的餐具擺置方式。特別要注意的是刀 刃側必須面向自己。用餐結束的擺置方式有兩種:用餐結束後中,可將叉子的下面向上,刀 子的 度脅?向內與叉子並攏,平行放置於餐盤上。接下來的擺置方式又分為英國式與法國 式,不論哪種方式都可以,但最常用的是法國式。盡量將柄放入餐盤內,這樣可以避免因碰 觸而掉落,服務生也較容易收拾。 出席結婚餐宴時,不論怎麼將餐具擺成「用餐中」的位 置,只要主要賓客用餐結束,就應立即把所有的料理收起。所以宴會時,切記皆以主要賓客 為中心進行。在宴會中,每吃一道菜用一副刀叉,對擺在面前的刀叉,是從外側依次向內取 用,因為刀叉擺放的順序正是每道菜上桌的順序。刀叉用完了,上菜也結束了。中途需是談 話或休息時,應該將刀叉呈八字形平架在盤子兩邊。反之,刀叉柄朝向自己並列放在盤子里 ,則表示這一道菜已經用好了,服務員就會把盤子撤去。前菜或是甜點等,如果是可以直接 用叉子叉起食用的料理,沒有必要刻意地一定使用刀子。在家庭內的餐會或是與朋友之間的 輕松聚餐,像沙拉或是蛋包飯之類較軟的料理也可以只使用叉子的進餐。但是在正式的宴席 上使用刀叉,能給人較為優雅利落的感覺。另外,在歐洲等地,常可看見有人右手拿叉子, 左手則拿著麵包用餐。不管吃得怎麼利落優雅,這樣用餐也只能在家庭或大眾化的店中,在 高級餐廳內是絕對行不通的。 沒用過的刀子,就這樣放在桌上即可,服務生會自動將它收 走。 雖說將刀與叉放在餐盤上並攏是代表結束用餐的訊息,但是沒有必要把干凈刀子特地 放入弄臟的餐盤內。 沒有用過的餐具保持原狀放在原處即可,硬要追求形式的規則反而顯 得奇怪。隨機應變,依當時的狀況處理事物才是最正確的。 即使掉了也不算出醜,但是自 己彎下腰去撿就滿丟臉的。所以東西掉了的時候最好請服務生過來替你撿起。服務生隨時都 在注意客人的情況,所以會很快地再拿新的餐具過來,萬一服務生沒有注意到,可以面向服 務生稍微地將手抬高一下,盡量不要引起其他人側目注視。 服務生的工作是為了使客人能 更愉快地用餐,所以盡可向他們提出要求。

說個實話,西餐這個東西未必合我們每個人的口味。我老婆有一次私下就跟我發表過感慨,說吃西餐啊,吃的是形式,內容上不足掛齒。她跟我她說我跟你吃西餐,我從來沒吃飽過。點著紅紅的蠟燭,鋪著白白的餐巾,拿著銀質的刀叉,吃的東西半生不熟,沒吃飽過。即便這樣,她發表一個誠實的感受,可是有的時候你到人家那兒吃飯,比如你跟外商在一塊兒談事,他請你吃西餐,你是沒有辦法迴避。你到國外去有些地方你找中餐,他做得也不地道,往往還很貴,這樣的話就有西餐禮儀問題了。

西餐禮儀它涉及的面非常多,比如進餐的順序有講究。西餐跟中餐有一條很大的不同,中餐往往是一桌,給你上滿了,西餐是吃一道上一道,吃一道上一道,吃一道上一道的,所以點菜的順序有講究。再者餐具的擺放和使用有講究,你不能亂來,當然我有一個朋友也跟我說,說吃西餐最爽的做法用筷子,這實際上不可能。再者餐桌上舉止有講究,譬如,吃西餐一般那個手,我上次講了手是不能放在桌下去的,它男女交叉排列。比如西餐一般是長桌,我是位先生,我的對面和兩側肯定都是美女,而且外國人的習慣,他為了多交朋友,廣結善緣,他習慣把不認識的人排在一塊兒,讓大家交流去認識,老把熟人放一塊兒這也麻煩了。明白手不能放到下面的原因了吧?那你手放在下面就麻煩了,你說你抓癢癢去了,萬一抓錯了地方呢?你的手。吃西餐的話兩個手要像我現在這樣的,要放在檯子上面,不能放下面,你放下面有時候也不好看。它有非常認真的講究。
那麼在西餐的餐桌禮儀中還有一點是比較重要的,就是餐桌上的交際是有講究的。比如你跟誰說話,你說什麼話,你先跟誰說話,後跟誰說話都有講究。比如你要去過正規的西餐廳你會發現正規的西餐廳跟中餐廳有一點截然的不同,什麼地方不同呢?你見不到現場服務的女服務生,女服務生頂多是在那買單的,結帳的,領位的,但是端盤子端菜的他都是男人。因為西餐是講女士優先,男人幹活,女人管吃,所以你要去參加一個家宴的西餐宴會的話,你要是一個有良好教養的男士,你首先應該致意的就是女主人,夫人好。如果這個女主人親自下手做羹湯,為你做飯的話,你還得贊美一下這個菜燒得很好吃。不管真好吃,假好吃,都得說好吃,這是對女主人的尊重也是對她全家的尊重,我剛才講這些問題你要不注意它就出麻煩了,我給你講兩個笑話。
