1.除梗、破碎：用手將葡萄擠破，去除果梗，容器為塑料盆或不銹鋼，不能用鐵制容內器。
2.調整容葡萄汁：糖度高成熟的紅葡萄在不加糖時，酒精度一般為8～12度左右。如想釀制酒精度稍高的酒，可在1升的葡萄汁中添加1度酒精的方法。具體操作為：先將白砂糖溶解在少量的果汁中，再倒入全部果汁。若制高度酒，加糖量要多，但由於酵母不耐高濃度糖液，所以，應分兩次加糖。
