Sweet Dumplings
This is a traditional dish for the Lantern Festival on the 15th of the Chinese Lunar January. The ingredients are glutinous rice flour, sugar, sesame, peanut paste and powdered coconut.
First mix the sugar, sesame, peanut paste and coconut to make the filling of the mpling. Add some cooking oil if the mixture is too dry and separating from each other. Then use some warm water to blend into the flour, and make it into a ball of soft dough. Break the dough into smaller pieces of about 2cm sized cubes. Wrap in right amount of fillings, and close the opening. Roll it in the center of the palms to create a round shaped mpling.
Bring a pot of water to boiling, and put in the mplings. After about 5 minutes of hard boiling, pour in some cold water to cool down the pot. With another 5 minutes cooking, the mplings are ready to serve.
These mplings are white, soft, both smell and taste good.
Dumpling is a traditional chinese food. On the lunar new year' s day, most families make a lot of delicious
mplings. To make them, follow this easy process.
The first step is to mix the flour with water. when the
dough is ready, we can begin to make mpling wrappers.
we use a rolling pole to roll the dough into small, thin and
round pieces so that they will be easy to cook. when the
wrappers are done, it' s time to prepare the filling. Usually,
we use meat such as beef or mutton, and some vegetables
such as cabbage or carrots for filling.You may actually
choose whatever you like to put into it. we must chop those
things into small pieces.Then put some salt, oil and other
condiments into it and stir it evenly. When all these
preparations are done, we can start making mplings.
First put a spoonful of filling in the center of the wrapper.
Then stick the two opposite sides together and then the
rest. Don' t just cover the filling with the wrappers. The best
shape of mplings is that of a ship, because when they
are boiling in the pan, they look like ships sailing in the sea.

Pumpkins may be poached, boiled, steamed or baked. Please be aware that Pumpkins tend to loose their nutritive value with prolonged cooking. Updated - 28 Sept. 2007: Beth wrote us to ask why her baked acorn squash had hard strings in it. Today as I was bakng some sugar pumpkins, I was pleased that they baked so nicely that the meat just slipped off the shell, without the hard veins (strings) sticking to the meat.
When scooping out the "meat" of many winter squash types, you may encounter some very hard "strings". These strings are actually the veins of the shell. Look at the acorn squash or sugar pumpkin and notice it's ridges. Between these ridges are the "veins" or strings that you may find once you have cut and then baked the squash or pumpkin. To avoid getting these hard little strings in your puree, scoop the insides out gently and not too closely to the shell. If you have baked your squash or pumpkin enough, these strings or veins will easily fall away from the shell as the meat is separated from it.

5.Sprinkle with choppd spring onion.
2.sweet and sour pork甜酸肉
Ingredients:
1 kg Pork Belly ( 1 inch cubes)
1 tsp salt
1 1/2 tbsp Brandy (optional)
1 Egg (beaten)
1 tbsp Cornflour
600 ml Vegetable oil
1 spring Onion (cut in to 1inch)
100 g Canned bamboo shoot
1 Green pepper (diced)
Sauce :
3 tbsp wine vinegar
3 tbsp sugar
1/2 tsp salt
2 tbsp Tomato puree or sauce
2 tbsp Orange juice
1 tbsp Soy sauce
1 tbsp Sesame oil
1 tbsp Cornflour
Directions:
1. Mix the pork cubes with salt & Brandy & leave to marinade for 15 minutes.
2. Blend the beaten egg, cornflour & add the pork cubes and turn until each cube is well coated.
3. Mix the sauce ingredients together in a bowl.
4. Heat the oil in a wok to 180 degree C or 350 degree F or until a cube of bread browns in 30 seconds. Add the pork cubes and deep fry for 3 minutes, then remove and drain on paper towels. Heat the oil again until smoking, return the pork with the bamboo shoots & fry for 2 minutes or until they are golden brown. Remove and drain on paper towels.
5. Now heat a pan and add the sauce mix and heat till slightly thick.
6. Mix the sauce with the meat & vegetable just before serving.
