Peking Duck, or Peking Roast Duck is a famous ck dish from Beijing[1] that has been prepared since the imperial era, and is now considered one of China's national foods.

燈影牛肉
「燈影牛肉」是四川達縣的傳統名食。牛肉片薄如紙,色紅回亮,味麻辣鮮脆,細嚼答之,回味無窮。
原料:
黃牛肉12兩(約480克),鹽、糖、花椒粉、辣椒粉、五香粉各適量。
烹飪方法:
1.選用牛後腿肉去浮皮邊角片成大薄片,均勻地撒上調料,晾呈鮮紅色,入烘爐烘乾。
2.將烘乾後的牛肉改小片上籠蒸透。
3.將蒸好的牛肉片置油鍋中,以文火慢慢炸透,烹入紹酒調料顛翻均勻後晾涼即成。
燈影牛肉的來歷
據說,此菜是八十多年前,四川梁平縣一姓劉的藝人來達縣以做腌鹵牛肉謀生,但生意蕭條,只好銳意求新,創製成一種薄片狀的牛肉乾。每當黃昏來臨,他就在鬧市設攤,專售此種牛肉乾。為招來顧客,特在食攤前張一又大又薄的牛肉片,後面點一盞油燈,映得牛肉片又紅又亮,燈影依稀可見,十分吸引過路行人。嘗之,麻辣脆鮮,人們呼之為「燈影牛肉」。從此,遠近傳名,生意越做越興旺。流傳至今,名不虛傳。
