“灯影牛肉”是四川达县的传统名食。牛肉片薄如纸,色红回亮,味麻辣鲜脆,细嚼答之,回味无穷。
原料:
黄牛肉12两(约480克),盐、糖、花椒粉、辣椒粉、五香粉各适量。
烹饪方法:
1.选用牛后腿肉去浮皮边角片成大薄片,均匀地撒上调料,晾呈鲜红色,入烘炉烘干。
2.将烘干后的牛肉改小片上笼蒸透。
3.将蒸好的牛肉片置油锅中,以文火慢慢炸透,烹入绍酒调料颠翻均匀后晾凉即成。

据说,此菜是八十多年前,四川梁平县一姓刘的艺人来达县以做腌卤牛肉谋生,但生意萧条,只好锐意求新,创制成一种薄片状的牛肉干。每当黄昏来临,他就在闹市设摊,专售此种牛肉干。为招来顾客,特在食摊前张一又大又薄的牛肉片,后面点一盏油灯,映得牛肉片又红又亮,灯影依稀可见,十分吸引过路行人。尝之,麻辣脆鲜,人们呼之为“灯影牛肉”。从此,远近传名,生意越做越兴旺。流传至今,名不虚传。
