Of course, the main difference on the Chinese dinner table is chopsticks instead of knife and fork, but that’s only superficial. Besides, in decent restaurants, you can always ask for a pair of knife and fork, if you find the chopsticks not helpful enough. The real difference is that in the West, you have your own plate of food, while in China the dishes are placed on the table and everyone shares. If you are being treated to a formal dinner and particularly if the host thinks you’re in the country for the first time, he will do the best to give you a taste of many different types of dishes.

The meal usually begins with a set of at least four cold dishes, to be followed by the main courses of hot meat and vegetable dishes. Soup then will be served (unless in Guangdong style restaurants) to be followed by staple food ranging from rice, noodles to mplings. If you wish to have your rice to go with other dishes, you should say so in good time, for most of the Chinese choose to have the staple food at last or have none of them at all.

Perhaps one of the things that surprises a Western visitor most is that some of the Chinese hosts like to put food into the plates of their guests. In formal dinners, there are always "public" chopsticks and spoons for this purpose, but some hosts may use their own chopsticks. This is a sign of genuine friendship and politeness. It is always polite to eat the food. If you do not eat it, just leave the food in the plate.

People in China tend to over-order food, for they will find it embarrassing if all the food is consumed. When you have had enough, just say so. Or you will always overeat!

When families gather for Christmas dinner, some will stick to formal traditions dating back to Grandma’s generation. Their tables will be set with the good dishes and silver, and the dress code will be Sunday-best.

But in many other homes, this china--and--silver elegance has given way to stoneware (粗陶)--and--stainless informality, with dresses assuming an equally casual--Friday look. For hosts and guests, the change means greater simplicity and comfort. For makers of fine china in Britain, it spells economic hard times.

Last week Royal Doulton, the largest employer in Stoke-onTrent, announced that it is eliminating 1,000 jobs--one-fifth of its total workforce. That brings to more than 4,000 the number of positions lost in 18 months in the pottery (陶瓷) region. Wedgwood and other pottery factories made cuts earlier.

Although a strong pound and weak markets in Asia play a role in the downsizing, the layoffs in Stoke have their roots in earthshaking social shifts. A spokesman for Royal Doulton admitted that the company “has been somewhat slow in catching up with the trend”toward casual dining. Families eat together less often, he explained, and more people eat alone, either because they are single or they eat in front of television.

Even dinner parties, if they happen at all, have gone causal. In a time of long work hours and demanding family scheles, busy hosts insist, rightly, that it’s better to share a takeout pizza on paper plates inthe family room than to wait for the perfect moment or a “real” dinner party. Too often, the perfect moment never comes, Iron a fine-pattened tablecloth? Forget it. Polish the silver? Who has time?

Yet the loss of formality has its down side. The fine points of etiquette(礼节) that children might once have learned at the table by observation or instruction from parents and grandparents(“Chew with your mouth closed.”“keep your elbows off the table.”)must be picked up elsewhere. Some companies now offer etiquette seminars for employees who may be competent professionally but clueless socially.

Choose correct answers to the question:

1.The trend toward casual dining has resulted in ______

A. bankruptcy of fine china manufacturers

B. Shrinking of the pottery instry

C. restructuring of large enterprises

D. Economic recession in Great Britain

2.Which of the following may be the best reason for casual dining?

A. Family members need more time to relax.

B. Busy scheles leave people no time for formality.

C. People want to practice economy in times of scarcity.

D. Young people won’t follow the etiquette of the older generation.

3.It can be learned from the passage that Royal Doulton is _______

A. a retailer of stainless steel tableware

B. a dealer in stoneware

C. a pottery chain store

D. a procer of fine china

4.The main cause of the layoffs in the pottery instry is _______

A. the increased value of the pound

B. the economic recession in Asia

C. the change in people’s way of life

D. the fierce competition at home and abroad

5.Refined table manners, though less popular than before in current social life, _______

A. are still a must on certain occasions

B. are bound to return sooner or later

C. are still being taught by parents at home

D. Can help improve personal relationships

根据题目中的the layoffs找到文章第4段首句,其中的have their roots in相当于题目中的main cause is,shifts相当于C中的change。

根据最后一段,特别是第2句“The fine points of etiquette... must be picked up elsewhere良好的餐桌礼仪必须在其他地方被重拾起来”,可知礼仪在某些场合还是必要的,故答案为A。

In china, it is customary to pick up food for your guests, or anyone else dining with you. Whereas this may surprise foreigners, as dining is more indivialistic in the West, it is a long-standing tradition and act of courtesy and consideration for Chinese people. It is seen to be taking care of others when you pick up a delicacy with your own chopsticks and put it in someone else's bowl. In this way, sharing of food is promoted and there is a closer connection to the people you are dining with. As people bee more aware of hygiene, using one's own chopsticks is bee less mon, and most of the time, a munal server is used instead. However, this tradition is still being practised today, in most social dining events and even at home to show care and hospitality.

Dining Etiquette

Dining while abroad can feel as though you are tiptoeing around a minefield of unfamiliar rules. Table manners are the ultimate way to show respect (or some accidental disrespect) to your gracious host.

Slurp your food.

In Japan, most commonly when eating noodles and soups, slurping shows your appreciation of the food to the chef. The louder the better! You may also drink directly from the soup bowl -- spoons are uncommon. Furthermore, never cross your chopsticks, lick your chopsticks, or stick your chopsticks vertically into a bowl of rice. Its considered very rude in Japan and many other Asian countries, including China.

Eat only with your right hand.

Sorry lefties -- in India, the Middle East, and some parts of Africa, it is considered unclean to eat with your left hand.

Dont offer to split the bill.

In France, splitting the bill is considered the height of unsophistication. Offer to pay the bill in its entirety or someone else will.

Bread is a utensil.

In France, you are supposed to use two hands to eat -- either fork and knife or fork and bread. Bread isnt meant to be an appetizer -- instead it serves to assist the food to the fork. When you eat the bread, tear off a piece of it to eat instead of biting directly into the bread. When not in use, the bread belongs on the table or tablecloth instead of the plate.

Dont touch any part of your meal with your hands.

In Chile, touching food with your hands is considered ill-mannered. Yep, even fries! In Brazil, too, pizza and burgers are normally eaten with a fork and knife.

Dont put food in your mouth with a fork.

In Thailand, forks are used to push food into a spoon. Also, its unusual to use chopsticks -- theyre considered tacky.
