由於歷史的因素,非洲菜式在保留傳統的烹制方法外,也吸納了很多法國菜式的做法,另外還受來自義大利和中東阿拉伯國家的許多影響,從而形成了風味獨特的食物結構。從北非到南非,由於種族和宗教文化等方面的影響,其飲食的主要風格在於以烤煮燴燉等方式下的各種食物的「雜燴」。

非洲人的進餐禮儀

在非洲很多地方,吃飯不用桌椅,也不使刀叉,更不用筷子,而是用手抓飯。吃飯時,大家圍坐一圈,一個飯盒和一個菜盒放在中間。每個人用左手按住飯盒或菜盒的邊沿,用右手的手指抓自己面前的飯和菜,送入口中。客人吃飯時應注意的是,切勿將飯菜撒在地上,這是主人所忌諱的。飯畢,長者未離席時,晚輩要靜坐等候;子女離席時,須向父母行禮致謝;客人則應等主人吃完後一道離開。

Pilipili湯

製作:1.炒鍋中加入色拉油,下青椒、洋蔥和山羊肉丁一同翻炒,然後加入適量的辣椒粉、番茄醬、雞粉、醬油調味,最後加老湯一同熬制。

2.湯熬好後,盛入紅椒中,然後將紅椒扣在盤中,在紅椒的四周撒上麵包丁。

3.喝湯時,將紅椒提起,紅椒中的湯就會流出來。

Tips:Pilipili是東部非洲斯瓦希里語中「辣椒」的意思。

三色鴕鳥蛋餅

製作:1.分別在菠菜碎、土豆碎和金槍魚中加入鴕鳥蛋液和適量鹽,調成汁。

2.炒鍋中放入適量色拉油,用洋蔥丁熗鍋後,將三種蛋汁分別淋入鍋中,攤成蛋餅,並將三張蛋餅摞在一起。

3.吃時切成三角狀即可。

坦尚尼亞炸角

製作:1.炒鍋中放入一塊黃油,油化開後下洋蔥丁,炒香後加入牛肉餡一同煸炒,然後再放入適量生薑粉、鹽、桂皮粉調味,炒熟。

2.用春卷皮將炒熟的餡包起捲成三角狀,邊上塗一層蛋液。

3.重新在炒鍋中放入黃油,將包好的角下鍋炸熟,吃時蘸上芒果醬,口感非常好。

Tips:炸角是非洲的一種小吃,很像中國的炸春卷,只是形狀是三角形的,多以肉和蔬菜為餡。

馬達加斯加燴菜

製做:1.將扁豆、圓白菜、紅椒、胡蘿卜清洗干凈,切絲,並分別用開水焯一下,擠干水分備用。

2.炒鍋入油,用洋蔥丁、蒜片和姜絲熗鍋,放入蔬菜絲一同炒,出鍋時加入鹽、白醋、黑胡椒調味即可。

3.玉米面用水煮熟(比我們喝的玉米粥要稠很多)。

Tips:在非洲,這道菜的食用方法是用手抓住玉米糊和菜一同放入口中
