西餐在菜單的安排上與中餐有很大不同。以舉辦宴會為例,中餐宴會除近10種冷盤外,還要有熱菜6-8種,再加上點心甜食和水果,顯得十分豐富。而西餐雖然看著有6、7道,似乎很繁瑣,但每道一般只有一種,下面我們就將其上菜順序作一簡單介紹,希望對您初到西餐廳點菜時能有所幫助。
1、頭盤
西餐的第一道菜是頭盤,也稱為開胃品。開胃品的內容一般有冷頭盤或熱頭盤之分,常見的品種有魚子醬、鵝肝醬、熏鮭魚、雞尾杯、奶油雞酥盒、局蝸牛等。因為是要開胃,所以開胃菜一般都具有特色風味,味道以咸和酸為主,而且數量較少,質量較高。
2、湯
與中餐有極大不同的是,西餐的第二道菜就是湯。西餐的湯大致可分為清湯奶油湯、蔬菜湯和冷湯等4類。品種有牛尾清湯、各式奶油湯、海鮮湯、美式蛤蜊周打湯、意式蔬菜湯、俄式羅宋湯、法式局蔥頭湯。冷湯的品種較少,有德式冷湯、俄式冷湯等。
3、副菜
魚類菜餚一般作為西餐的第三道菜,也稱為副菜。品種包括各種淡、海水魚類、貝類及軟體動物類。通常水產類菜餚與蛋類、麵包類、酥盒菜餚品均稱為副菜。因為魚類等菜餚的肉質鮮嫩,比較容易消化,所以放在肉類菜餚的前面,叫法上也和肉類菜餚主菜有區別。西餐吃魚菜餚講究使用專用的調味汁,品種有韃靼汁、荷蘭汁、酒店汁、白奶油汁、大主教汁、美國汁和水手魚汁等。
4、主菜
肉、禽類菜餚是西餐的第四道菜,也稱為主菜。肉類菜餚的原料取自牛、羊豬、小牛仔等各個部位的肉,其中最有代表性的是牛肉或牛排。牛排按其部位又可分為沙朗牛排(也稱西冷牛排)、菲利牛排、「T」骨型牛排、薄牛排等。其烹調方法常用烤、煎、鐵扒等。肉類菜餚配用的調味汁主要有西班牙汁、濃燒汁精、靡菇汁、白尼斯汁等。
食類菜餚的原料取自雞、鴨、鵝,通常將兔肉和鹿肉等野味也歸入禽類菜餚禽類菜餚品種最多的是雞,有山雞、火雞、竹雞、可煮、可炸、可烤、可燜,主要的調味汁有黃肉汁、咖喱汁、奶油汁等。
5、蔬菜類菜餚
蔬菜類菜餚可以安排在肉類菜餚之後,也可以與肉類菜餚同時上桌,所以可以算為一道菜,或稱之為一種配菜。蔬菜類菜餚在西餐中稱為沙拉。與主菜同時服務的沙拉,稱為生蔬菜沙拉,一般用生菜、西紅柿、黃瓜、蘆筍等製作。沙拉的主要調味汁有醋油汁、法國汁、干島汁、乳酪沙拉汁等。
沙拉除了蔬菜之外,還有一類是用魚、肉、蛋類製作的,這類沙拉一般不加味汁,在進餐順序上可以做為頭盤食用。
還有一些蔬菜是熟食的,如花椰菜、煮菠菜、炸土豆條。熟食的蔬菜通常是與主菜的肉食類菜餚一同擺放在餐盤中上桌,稱之為配菜。
6、甜品
西餐的甜品是主菜後食用的,可以算做是第六道菜。從真正意義上講,它包括所有主菜後的食物,如布丁、煎餅、冰淇淋、乳酪、水果等等。
7、咖啡、茶
西餐的最後一道是上飲料,咖啡或茶。飲咖啡一般要加糖和淡奶油。茶一般要加香桃片和糖。
西餐禮儀
雖然最近在國內也相當盛行吃西餐,但是在內容和形式上,隨著各餐廳的經營型態而「純」、「雜」不等,「繁」、「簡」不一,十分值得一談。
美國的西餐,和歐洲許多國家也頗有不同。如果您到美國旅遊,赴家庭宴會或在餐館吃「正餐」時,請先注意下列一般原則:
男女一起在餐館用餐,通常由男方負責點菜(order)和付帳(pay the check or bill)。
許多基督教或天主教家庭飯前要由家中一員帶領禱告(say a prayer or "blessing"),您即使不信教,也請跟著低頭,以示禮貌和尊重。
美國人宴客,是由女主人(或男主人)先拿起餐具進食,客人才跟著動餐具。
如果您不喜歡遞過來的菜餚時,只要說"No, thank you."即可。
咀嚼食物,一定要避免出聲。
用過的刀、叉,必須放回盤子里,不能放在餐桌巾上。
吃完主菜,把刀和叉平行地斜放在主菜盤(main plate)上,是向主人或侍者表示可以把主菜餐盤拿走了。
席間要輕聲談些輕松愉快的話題,盡量避免一聲不響地悶著頭吃飯。

餐位的安排大致上如上圖。原則上男主賓(Gentleman of honor)坐在女主人(hostess)右邊,女主賓(lady of honor )坐在男主人(host)右邊,而且多半是男女相間而坐,夫婦不坐在一起,以免各自聊家常話而忽略與其他賓客間的交際。
★餐具擺法
家庭或餐廳宴會時,餐具的種類和數量,因餐會的正式(formal)程度而定。越正式的餐會,刀叉盤碟擺得越多。本文所舉的例子,適用於不十分正式的宴會(多數家庭式宴會屬於此類)。
叉子(forks)放在主菜盤(main plate)左側,刀子(knives)、湯匙(spoons)擺在右側。
刀叉和湯匙依使用的先後順序排列。最先用的放在離主菜盤最遠的外側,後用的放在離主菜盤近內側。假如主人決定先上主菜再上沙拉,就要把主菜叉子放在沙拉叉子的外側。
沙拉盤放在靠主菜盤的左邊。美國人通常把主菜和沙拉一起送上桌來,而不像法國人一樣,主菜吃完以後才上沙拉。

一、快讀

二、跳讀
即根據問題信息跳躍性地閱讀文章的某些段落或某些句子。跳讀可以加強閱讀的針對性、節約閱讀時間和提高閱讀效率。許多閱讀理解的事實細節題均可用跳讀法在原文中找到相關的依據,從而迅速做出選擇。
三、細讀
找到文章中的有關范圍以後,即在該范圍內逐句閱讀,特別對關鍵詞句要仔細琢磨,以便對其有較深刻、較准確的理解和掌握。不僅要理解其字面意思,而且要通過推理、判斷,弄清文章字里行間的潛在意思。在細讀時,對沒有學過的生詞,可根據上下文或自己的背景知識等來推測其意思;對難以看懂的長句,可藉助語法手段,對其加以分析,以達到透徹理解。

The private automobile(私家車) has long played an important role in the United States. In fact, it has become a necessary and important part of the American way of life.
